It’s no secret that the hospitality industry has faced extraordinary challenges in recent years from the pandemic and climate change to the rising costs of goods and services. Most recently, shifting trade dynamics and new fees have introduced additional volatility into our supply chain, raising the cost of doing business in real time.

These challenges don’t just affect restaurants – they ripple across our entire food system, impacting farmers, local producers, wine vendors, suppliers, and grocers. For independent restaurants like ours, these pressures are not only financial, they test the very sustainability of our way of working.

In response, we are introducing a 3% Sustainability Surcharge to all checks. This charge is designated to support the long-term sustainability of both our business and our world. It allows us to adapt to changing market conditions without significantly altering our menu pricing – helping us continue investing in local partnerships, responsible sourcing, and practices that protect our planet and the jobs of over 350 employees.
